4 cups of diced russet potatoes; peeled
1/2 cup chopped green bell peppers
1/2 cup chopped red bell peppers
8 cloves garlic, minced
1 cup diced yellow onion
1 10 ounce can cream of mushroom soup
3/4 cup of water
1 to 2 cups diced smoked sausage
1/2 to 1 tablespoon cajun seasoning (or more to taste)
Preheat the oven to 425 degrees F.
In a large bowl or casserole dish, combine all the ingredients and mix well.
If mixing in a bowl, transfer to a baking dish. Cover with aluminum foil and bake for 45 minutes.
Remove the foil and bake until most of the liquid cooks out, (15-20 minutes).
