Tomato Parmesan Pasta


INGREDIENTS:

3 tbs extra virgin olive oil

3 garlic clove, minced

3 tsp fresh rosemary; chopped (or 1 tsp dried)

1 tsp fresh thyme; chopped (or 1 tsp dried)

crushed red pepper flakes (to taste)

5 tbs tomato paste

1 cup pasta of choice

salt and fresh black pepper

parmesan cheese for topping

fresh basil for topping, optional

DIRECTIONS:

1. In a saucepan on medium/low heat, add the olive oil and garlic, saute´ about 2 minutes. Add the rosemary, thyme, and red pepper flakes; saute until the garlic begins to brown.

2. Stir in the tomato paste, then add 3 cups of water and bring to a boil. Add the pasta and a good amount of salt. Cook until pasta is al dente (usually about 10-12 minutes; but check the package of the pasta you're using)

3. When the pasta is done, remove from the heat and add in parmesan cheese (shredded, grated, or sliced)

4. Serve warm, topped with fresh basil (optional)
