Tomato Feta Pasta

1 container cherry tomatoes

olive oil

salt and black pepper

1 block of feta

1 tsp each of oregano and thyme

3 tsp red pepper flakes, cajun seasoning, and onion powder

6-7 cloves garlic, smashed

2 cups spinach

Pasta of choice

  1. In a glass baking dish, add the tomatoes, a drizzle of olive oil, salt and pepper. Mix well to coat all of the tomatoes.

  2. In the middle of the dish, place the block of feta. Season with oregano, thyme, red pepper, cajun, and onion powder. Add the garlic around the block of feta.

  3. Top with spinach

  4. Bake at 400 degrees for about 25-30 minutes.

  5. While it bakes, boil water for any kind of pasta. Cook until Al Dente; according to package. Drain, set aside.

  6. Remove from oven and mix well. Add in the pasta and mix well again.

Sometimes feta cheese can be a little runny, you can substitute with ricotta or halloumi.

Even though you're adding olive oil twice in this recipe; be scarce with it. If not, the dish will come out very greasy and unappealing.

SEASON SEASON SEASON. These measurements are my best guesses. Without adding a lot of seasonings, this dish is very bland.
