Spinach & Artichoke Dip

1 tbs butter

2 tbs olive oil

8 oz cream cheese

1 cup sour cream

10 oz fresh spinach, steamed, roughly chopped

5-9 cloves garlic, minced

cajun seasoning, to taste

red pepper flakes, to taste

white or black pepper, to taste

5 oz parmesan cheese, shredded

16 oz mozzarella, shredded

14 oz artichoke hearts, roughly chopped

parsley, for garish

chips or bread, for serving


  1. Preheat oven to 375° F. Pour the olive oil into a skillet and set aside.

  2. Cook the spinach down in the butter, let cool and wring out the water.

  3. In a bowl, combine together the cream cheese, sour cream, garlic, spinach, artichoke hearts, parmesan cheese and about 1.5 cups of mozzarella. Then season to taste.

  4. Pour the mixture into the skillet and top with red pepper and the remaining mozzarella.

  5. Bake for 20-25 minutes until bubbly; then turn on the broiler and cook for a few minutes until the cheese browns.

  6. Serve hot, topped with parsley.
