Peanut Brittle

INGREDIENTS:
1 cup white sugar
1/2 cup light corn syrup
2.5 ounces water
2 cups dry roasted peanuts (unsalted)
1 1/2 teaspoons salt
2 tablespoons butter (plus more)
2 teaspoons baking soda
DIRECTIONS:
Line a baking sheet with parchment paper, grease with a thin layer of butter and set aside.
In a nonstick skillet on medium heat, combine the sugar, water, and corn syrup and bring to a boil.
Once boiling, stir in the peanuts and salt. Stir very occasionally until begins to turn to a golden amber color.
Remove from the heat and stir in the baking soda and butter and pour onto the baking sheet.
Let cool and break into pieces.
