Peach Cobbler

6-8 fresh peaches, sliced (or about 35 ounces frozen peaches)

1 cup white sugar

1 cup light brown sugar

1 tsp vanilla extract

1 tsp almond extract

1/2 tbs ground cinnamon

1/2 tsp nutmeg

2 tsp cornstarch

1 tsp cream of tarter

1/2 stick butter, softened

2 tbs water

squeeze fresh lemon juice


2 cups flour

1 cup white sugar

1 cup light brown sugar

2 tbs baking powder

1/2 tbs ground cinnamon

1 stick of butter, cold

hot water


  1. Preheat oven to 375 degrees. Coat a 9x13 glass dish with a thin layer of butter.

  2. In a bowl, add the peaches, white sugar, brown sugar, vanilla, almond extract, cinnamon, nutmeg, cornstarch, butter, water, and lemon juice. Mix it until combined well.

  3. Pour the mixture into the baking dish, cover with aluminum foil and bake for about 25 minutes.

  4. While that bakes, to a clean bowl, add the flour, white sugar, brown sugar, baking powder, cinnamon, and butter. Use your hands or a dough knife to mix until crumbly. Add hot water, a little bit at a time and mix until the dough becomes thick.

  5. Spoon the dough mixture onto the peaches, leaving some space in between each spoonful.

  6. Bake, uncovered for 30 minutes on the bottom rack (to prevent burning)

Serve warm with vanilla ice cream :)
