1 yellow onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

4 stalks celery, diced

7 cloves garlic, minced

2 boneless skinless chicken thighs, cubed

1 boneless skinless chicken breast, cubed

1/2 pound pork smoked sausage, sliced

3 tablespoons vegetable oil

1/2 stick butter

1/2 can cream of chicken soup

1/2 can cream of mushroom soup

2 cups chicken broth

cajun seasoning, to taste

red pepper flakes, to taste

cayenne pepper, to taste

garlic powder, to taste

onion powder, to taste

8 ounces pasta of choice

green onions, for garnish


  1. In a large pot on medium high, heat the oil and begin to sear the chicken and sausage. Season to taste and let brown until it begins to caramelize, about 20 minutes.

  2. Remove and set aside. Melt the butter and saute the onion, peppers and celery on medium heat for 25 minutes. Add in the garlic and saute for 3 minutes.

  3. Add the meats back into the pot and stir in the soups and broth. Bring this up to a boil and add in the uncooked pasta. Be sure there is enough liquid to cover the pasta.

  4. Once boiling, lower the heat and cover; let simmer until the pasta is cooked, about 15 minutes, stirring often.

  5. Serve hot topped with green onions.

NOTE: You can substitute the chicken with beef, pork, or shrimp!
