Oven Baked Nachos

INGREDIENTS:

1 1/2 pounds ground beef

cajun seasoning

5 garlic cloves

1/2 cup beef broth

2-3 tablespoons taco seasoning (click for my recipe!)

tortilla chips


TOPPINGS:

6 oz shredded cheddar cheese

6 oz shredded monterey jack cheese

pickled jalapeños

1 can of corn, drained and rinsed

1 can of black beans, drained and rinsed

cilantro, chopped

cherry tomatoes, halved

purple onion, diced

avocado, diced

green onions, sliced

sour cream (plain or see below for my version!)


**NOTE: Feel free to add other ingredients you like or take any of these away and put as much as you would like! These are just my preference :)


sour cream:

1 cup sour cream

1 lime, juiced

1 teaspoon salt

3 tbs juice from pickled jalapeños


DIRECTIONS:

  1. In a skillet on medium heat, brown the ground beef with the garlic and cajun seasoning. Drain, if necessary. Add in the broth and taco seasoning, and let simmer for about 20 minutes.

  2. Preheat the oven to 350 degrees F.

  3. In a springform pan, layer the chips and anything you wish to have baked. I did the black beans, purple onion, corn, and cheese. Bake for about 20 minutes.

  4. Carefully remove the ring from the springform pan.

  5. Top with the remaining ingredients!
