Oatmeal Raisin Cookies



INGREDIENTS 3/4 cup salted butter

1/2 cup dark brown sugar

1/2 cup light brown sugar

1/2 cup white sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

3 teaspoons cinnamon

1 teaspoon nutmeg

2 teaspoons vanilla

2 eggs

1/4 cup pure cane syrup

2 cups flour

2 cups oats

1 cup raisins


DIRECTIONS:

  1. Preheat your oven to 350 degrees F. Place the raisins in a a bowl of cold water and line a baking sheet with parchment paper; set aside.

  2. In a bowl, sift together the flour, baking soda, and baking powder. Add the butter and sugars into a mixer on medium speed and beat for 3 minutes. Crack in the eggs, one at a time and beat after each one.

  3. Once combined, add in the vanilla, nutmeg, cinnamon, and syrup. Combine again. Slowly add in the flour mixture until thoroughly combined. Fold in the oats and the raisins.

  4. Place 1 1/2 tablespoon sized portions onto the baking sheet and press down slightly, bake for 10-15 minutes.
