My Favorite Breakfast (for 2 or more)

INGREDIENTS:

6 strips bacon

4 eggs

chives, for garnish


BISCUITS:

2 cups all purpose flour

2 teaspoons salt

1 tablespoon baking powder

6 tablespoons cold butter

1 1/2 cups buttermilk


GRAVY:

2 tablespoons bacon grease

1/4 cup all purpose flour

2 cups milk

cajun seasoning

garlic powder

onion powder

black pepper


DIRECTIONS:

  1. Preheat your oven to 400°F and butter a sheet pan, set aside.

  2. In a bowl, combine the flour, salt, and baking powder. Cut the cold butter into slices/cubes. Mix the butter into the flour until the mixture becomes crumbly.

  3. Stir in the buttermilk & spoon large spoonfuls onto the baking sheet.

  4. Line a second baking sheet with parchment paper and lay the bacon out. Bake both 15-20 minutes or until the biscuits are done and the bacon is at your desired crispiness!


TO MAKE THE GRAVY:

5. In a cast iron skillet, heat the bacon grease on medium heat. Whisk in the flour. Slowly stir in the milk, stirring constantly until there are no clumps.

6. Remove from the heat and season to taste!



7. Cook your eggs however you choose. & garnish with chives. Serve hot with coffee(:
