4 bunches (about 3 pounds) mustard greens
4 tablespoons vegetable oil
12 ounces salt pork- cubed
1/2 pound smoked sausage, sliced
cajun seasoning- to taste
1. CLEAN YOUR GREENS!!!!!
my preferred way is to fill the sink up with cold water, about a cup of white vinegar and let them soak for about 15 minutes. drain that out and then individually wash each leaf under running water!
2. In a large pot, heat the vegetable oil and brown the pork and sausage on medium heat for about 15 minutes. Add in the onion, sauté for about 5 and the garlic, then sauté another 3!
3. Add the greens to the pot, out about 8 cups of water, season with cajun seasoning. Put a lid on the pot and simmer for about 3 hours, until the greens are tender.
4. Serve over rice and cornbread
