string cheese (mozzarella)
2 tbs heavy cream
1 cup flour
1 cup Panko bread crumbs
cajun seasoning, cayenne, black pepper, onion powder, and garlic powder
oil, for frying
fresh parsley, for garnish (optional)
fresh grated parmesan, for garnish (optional)
Remove the string cheese sticks from the wrappers, place on parchment paper lined sheet pan and freeze for a minimum of two hours.
Preheat about 2 inches of oil to 350 degrees F.
In 4 separate bowls, create the batter steps. In one bowl, have cold water. In another, whisk together the eggs and heavy cream and season with black pepper and cajun seasoning (to taste). In the third bowl, have the flour, seasoned with cajun seasoning, garlic powder, onion powder, and cayenne (all to taste). In the fourth bowl, have the Panko bread crumbs.
To batter, dip the frozen cheese sticks into the water then the flour. Shake off the excess flour and dip in the egg mixture, then Panko. Dip them again in the eggs and Panko one last time. Press the coating down onto each stick to ensure its covered well.
When the oil is hot, fry the cheese sticks in batches for 3-4 minutes. Be sure not to over fry because the cheese will start melting out!
Remove and drain on paper towels.
Top with fresh parsley and parmesan and served with Marinara sauce** (if desired)
