Mama’s Cornbread

1/4 cup vegetable oil

2 boxes Jiffy cornbread mix

2 eggs

2/3 cup of milk

4 tbs sugar



  1. Preheat oven to 400 degrees F, pour the oil into a cast iron skillet and bake until sizzling hot- about 25 minutes.

  2. In a mixing bowl, make the cornbread according to the directions on the box. Add in the sugar and combine.

  3. Pour the batter directly into the hot skillet and let stand on the counter for one hour.

  4. Bake for 20 minutes. Turn broiler on high to brown the top a little.

Serve warm topped with butter!
