Mama's Potato Salad

INGREDIENTS 8 large russet potatoes - peeled & washed

10 eggs

2 tablespoons yellow mustard

1/2 - 1 cup mayo

cajun seasoning


  1. Cut the clean and peeled potatoes into large chunks. Fill a large pot with water, add in the potatoes and eggs and bring to a boil. Cook until the potatoes are fork tender- about 25 minutes and drain.

  2. Immediately after cooking, drop the eggs into a bowl of ice water. Let sit about 5 minutes and peel. Then rinse again to make sure all the egg shells are off.

  3. Add the eggs and potatoes into a bowl and mash together with a potato masher.

  4. Stir in the mustard and mayo; then season to taste with cajun seasoning.

  5. Sprinkle some more cajun seasoning on top and serve hot!
