Mama's "Baked" Potatoes

NOTE: 2 potatoes make 1 large potato by the end of this recipe. So feel free to use as many as you wish. The rest of the ingredients are enough to use as toppings on several large potatoes!


INGREDIENTS:

2 russet potatoes

1 pound smoked sausage, quartered into bite sized pieces

1/4 cup bacon grease or butter

1/3 cup all purpose flour

black pepper, to taste

cajun seasoning, to taste

2 cups milk

shredded cheddar cheese, for topping, if desired

green onions, for topping, if desired

butter, for topping, if desired


NOTES: you can also add sour cream, bacon, or any other toppings you'd like! it's a potato! get creative :)


  1. Thoroughly wash each potato and use a fork to poke holes all over. Place in an unsealed ziploc bag and microwave using the 'potato' setting on your microwave. For two, mine took 7 minutes.

  2. While those cook and cool, cut the sausage into bite sized pieces. Add to a skillet on medium high heat and brown down. Remove and add in the bacon grease.

  3. Whisk in the flour and cook for about 4 minutes on a medium low heat; to cook out the raw flour taste.

  4. Slowly whisk in the milk and season to taste. Leave on a low heat to simmer and thicken, then remove.

  5. Once the potatoes are cooled enough to handle, lay them on a cutting board and cut one end off of each potato. Place the potatoes on a sheet of aluminum foil, with the two cut ends facing each other. Using a knife, cut a slit at the top into the foil and open up the potato. Use a fork and fluff the insides out, add in your butter and toppings as desired.

  6. If adding cheese, I like to place mine under the broiler on HI until it's just melted.

  7. Serve hot with your favorite toppings :)
