1 yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
5-7 cloves garlic, minced
1 stick salted butter + 3 tablespoons
1 pound ground beef
1 pound ground pork
1 16 oz container Savoie‘s Dressing Mix
3-9 cups rice, cooked
4 bone in chicken drumsticks
4 bone in chicken thighs
2 tablespoons mustard powder
2 tablespoons cayenne pepper
cajun seasoning, to taste
green onions, for garnish
In a large pot, melt the butter and sauté the onion and peppers on medium heat for 25 minutes. Add the garlic and saute for 3 minutes.
While that sautés, cook the rice. Season the rice with cajun seasoning and add in the 3 tablespoons of butter before cooking. Preheat the oven to 375°F.
Add the chicken to a large bowl, season with cajun seasoning, cayenne, and mustard powder. Line a baking sheet with aluminum foil and place the chicken down. Cover with another sheet of foil and bake until the chicken reaches an internal temp of 165°F- 30-40 minutes.
To the pot with the veggies, add in the ground beef and pork, turn the heat to high and brown well. Pour in enough water to cover the meat and add in the whole container of dressing mix.
Bring this to a simmer and cook for 20 minutes. When done, remove most of the liquid from the pot, setting it aside in a bowl. Spoon the cooked rice into the meat mixture and combine. If the mixture looks dry, add spoonfuls of the liquid back in until moist to your preference.
When the chicken is done, turn the broiler to HI for a few minutes to make the skin crispy.
Serve hot with the rice dressing topped with green onions.
