Fried Rice

INGREDIENTS: *these ingredients make a one-person portion*

1/4 cup white rice (uncooked)*

1 egg, scrambled**

4-6 tbs coconut aminos (or soy sauce)***

1/4 cup frozen carrots and peas

2 tbs sesame oil

black pepper, cajun seasoning

green onions, for topping (optional) sesame seeds, for topping (optional)


**If adding a protein (chicken, steak, shrimp, etc.) just cook the protein how you prefer. I like to saute it in a little sesame oil, cajun seasoning, and black pepper.


DIRECTIONS:

  1. In a skillet, heat the sesame oil on medium/low, add the rice and frozen veggies. Season with black pepper and cajun seasoning.

  2. Pour the coconut aminos (or soy sauce) and mix well.

  3. With the rice pushed to one side of the skillet, scramble the egg. Try not to mix it with the rice before it is fully cooked or it'll end up mushy!

  4. With the egg fully cooked, mix everything together.

  5. Top with green onions and sesame seeds, if desired!

NOTES:

* Using day old or cold rice will prevent the dish from sticking together and becoming mushy.

**Scrambling the egg (s) separate from the rice keeps out the extra liquids from the eggs; therefore preventing the mushy texture.

*** Coconut Aminos is a low sodium replacement for soy sauce. However, if you like the rich taste of soy sauce, the aminos won't cut it. Coconut Aminos, while similar in color and consistency, have a lighter, sweeter taste than soy sauce. (the amount you use of either will vary depending on your taste! start small, you can always add but not take away!)
