Fried Green Tomatoes

INGREDIENTS:

3 green tomatoes

1 cup buttermilk

2 eggs

1 cup all purpose flour

1/2 cup yellow cornmeal

black pepper

red pepper flakes

garlic powder

cajun seasoning

vegetable oil, for frying


DIRECTIONS:

  1. Use a serrated knife to slice the cleaned tomatoes into slices about 1/4 inch thick. Lay the slices on a paper towel lined sheet pan and let sit for about 20 minutes.

  2. In a bowl, combine the buttermilk, eggs, and cajun seasoning, to taste. In a separate bowl, combine the flour, cornmeal, and season to taste.

  3. Preheat just enough oil to cover the tomatoes to 375 degrees F. Dredge the tomato slices in the dry mixture, wet, and dry again. Repeat until all the slices are coated evenly.

  4. Fry, in batches, for about 10 minutes, flipping halfway.

  5. Remove and drain on a paper towel lined wire rack.

  6. Serve with remoulade sauce.
