Large bowl for ice bath 3 cups vegetable oil, for frying
Fresh parsley, for garnish (if desired)
Grated Parmesan, for garnish (if desired)
FLOUR DREDGE:
1 1/2 cups flour
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried mustard
1/2 teaspoon cayenne (less or more if desired)
1 tablespoon cajun seasoning
BREADCRUMBS:
2 cups regular bread crumbs **SEE NOTES**
2 tablespoons italian seasoning
2 tablespoons cajun seasonings
LIQUID DREDGE:
1 1/2 cups milk
2 eggs
*Same seasonings as flour mixture*
**The seasonings and amounts listed above are my personal preferences and simply a suggestion, you can change to fit your tastes.
DIRECTIONS:
In 3 separate bowls, combine the ingredients listed above for the dredges. In another large bowl, prepare the ice bath (ice cubes and cold water).
Bring a pot of water to a rolling boil; drop in the green beans and cook for 5 minutes. Remove and immediately drop into the ice bath to stop the cooking process. Remove after about a minute.
Dredge the beans (*SEE NOTES*) in the flour, egg mixture, and then the breadcrumbs. Set aside and finish dredging all of them.
Heat the vegetable oil to about 350 degrees F and fry the beans in batches for 2-5 minutes. (*SEE NOTES*)
Drain on paper towels. Garnish, if desired and serve with ranch dressing :)
NOTES:
Bread Crumbs: You can either buy regular bread crumbs or the Italian kind and omit adding the Italian seasoning
Dredging: I found it easier, although more time consuming, to dredge the beans individually rather than in batches. Doing them individually allowed each one to get coated more evenly.
Frying: I personally like mine crispy so I fried them closer to 5 minutes!
