Firecracker Shrimp

INGREDIENTS: 1/4 cup mayo

3 tablespoons sweet chili sauce

sriracha

1 teaspoon black pepper

5 cloves minced garlic

black pepper 1/2 pound shrimp tails (cleaned and deveined) 1 cup cornstarch or flour

cajun seasoning

vegetable oil, for frying

green onions, for garnish



note: ** this works best when you use fresh oil to fry in**

DIRECTIONS:

  1. In a bowl, combine the mayonnaise, sweet chili sauce, sriracha (to taste), garlic, and black pepper. Set aside.

  2. Preheat the oil to 350 degrees F. In a separate bowl, season the cornstarch with cajun seasoning. Dip each shrimp individually in the cornstarch, coating completely.

  3. Fry the shrimp about 5 minutes, until crispy. Drain on paper towels. Toss in the sauce.

  4. Serve topped with green onions and extra sriracha!
