Eggs & Rice

white rice, cooked


vegetable oil, for frying

cajun seasoning, to taste

green onions, for garnish (if desired)


  1. In a skillet on medium high heat, add in the vegetable oil and let it get hot. Once it is, crack in your eggs, season you taste and fry to your desired temp. (i like mine over easy/medium for this!)

  2. Remove, draining off the excess oil and add to the rice. Mix together and top with green onions!
