Egg Salad


7 hard boiled eggs, roughly chopped

1/2 purple onion, finely diced

2 stalks celery, finely chopped

small handful (5-7) small sweet gherkin pickles, roughly chopped

3 sprigs dill weed, finely chopped

1/4-1/2 cup mayo

2 tablespoons dijon mustard

1-3 tablespoons hot sauce

cajun seasoning, to taste

paprika, for garnish


DIRECTIONS:

  1. In a large bowl, combine the eggs, onion, celery, pickles and dill. Add in the mayo and mustard until the its your desired consistency (some people prefer more or less mayo!)

  2. Season to taste, chill for about 30 minutes and serve! *mine is served with tortillas cut into triangles and deep fried!*
