Creamy Lemon Garlic Salmon

INGREDIENTS: 1 salmon filet

1 tbs olive oil

1 tsp dried oregano

1 tsp paprika

1 tsp salt

1/2 tsp black pepper


SAUCE: 2 tbs olive oil

3 cloves garlic, minced

1 cup heavy whipping cream

juice from half a lemon

1/4 cup grated parmesan cheese

paprika, cayenne, salt and black pepper to taste


parsley, optional, for topping

DIRECTIONS:

  1. Let a nonstick skillet heat up on medium heat. While that heats up, coat the salmon in the olive oil and season with oregano, paprika, salt and black pepper.

  2. When the skillet is hot, place the salmon skin side down for 4 minutes. Flip and cook for another 4-6 minutes until pink and opaque throughout. Remove the salmon and set aside.

  3. In the same skillet, add the oil and garlic; saute´ until fragrant. Add the heavy cream and lemon. Bring to a simmer and season with paprika, cayenne, salt and pepper to taste.

  4. Add the salmon back into the skillet and let the sauce reduce about half on a low heat.

Serve over pasta or rice of choice!
