Crawfish Etouffe´

2 sticks butter

2 celery stalks, chopped

1 red bell pepper, diced

1 green bell pepper, diced

2 yellow onions, diced

1 bunch of green onions, chopped

4 garlic cloves

tablespoon cajun seasoning

teaspoon of cayenne

pinch of salt

2 pounds Louisiana Crawfish

2 cups HOT water

1/3 cup of flour


1. Melt butter in a pot, add veggies and sauté for 30 minutes on medium/low heat. Add garlic, sauté for another minute.

2. Season with cajun seasoning, cayenne and salt, mix. Add in flour, mix well and sauté for another 30 minutes. Watch carefully and stir often so it doesn’t burn.

3. After 30 minutes, add the water in a little at a time; mixing well. Add the crawfish, cover and simmer for 20-30 minutes, stirring often.

serve over rice!
