coconut chocolate chip muffins


INGREDIENTS: 1 cup coconut flour

1 teaspoon baking powder

1/2 teaspoon salt

3 eggs

2 teaspoons vanilla

1/2 cup coconut milk (more or less, see below)

1 cup sugar

1/4 cup coconut oil, melted

1/2 cup semisweet chocolate chips

1/2 cup shredded coconut

Topping:

coconut flakes


DIRECTIONS:

  1. In a mixing bowl, combine the flour, baking powder, sugar, and salt. Set aside.

  2. Using a stand or hand mixer, beat the eggs on high until they start to become fluffy, about 3 minutes. Mix in the vanilla.

  3. Add dry ingredients to the wet, a little bit at a time, until combined. When the mixture becomes crumbly, add in the coconut oil and slowly add in the coconut milk.

  4. Once combined, fold in the shredded coconut and chocolate chips.

  5. Preheat your oven to 325 degrees F. Place cupcake liners in a muffin tin, top with coconut flakes. Bake for 15-25 minutes, until a toothpick inserted through the middle comes out clean! If the coconut begins to brown too much, place a piece of aluminum foil on top to prevent burning.

  6. Remove and let cool.
