Chicken Gnocchi Soup

INGREDIENTS:
3 cloves garlic, minced
2 stalks celery, diced
1/4 cup red onion, diced
4 tablespoons butter
2 chicken breasts, cooked
2 lbs gnocchi
1/4 cup flour
1 quart half and half
20 oz chicken broth
1 cup shredded carrots
3 cups chopped spinach
garlic salt
cayenne
cajun seasoning
black pepper
DIRECTIONS:
Saute the garlic, celery, and red onion in the butter until the onions are translucent (about 15 minutes)
Add in flour, whisk and cook for about 4 minutes. Add in half and half, whisk and let simmer until thickened
Add in chicken broth and carrots, bring to a boil
After it is boiling, add in the gnocchi, cook according to package (usually around 2 minutes)
Lower to a simmer, add in cooked chicken and spinach and season to taste.
NOTES:
Depending on how thick you like your soup, you can add more or less of the flour and chicken broth until the consistency is just how you like it!
