Chicken Gnocchi Soup

3 cloves garlic, minced

2 stalks celery, diced

1/4 cup red onion, diced

4 tablespoons butter

2 chicken breasts, cooked

2 lbs gnocchi

1/4 cup flour

1 quart half and half

20 oz chicken broth

1 cup shredded carrots

3 cups chopped spinach

garlic salt

cajun seasoning

black pepper

  1. Saute the garlic, celery, and red onion in the butter until the onions are translucent (about 15 minutes)

  2. Add in flour, whisk and cook for about 4 minutes. Add in half and half, whisk and let simmer until thickened

  3. Add in chicken broth and carrots, bring to a boil

  4. After it is boiling, add in the gnocchi, cook according to package (usually around 2 minutes)

  5. Lower to a simmer, add in cooked chicken and spinach and season to taste.

Depending on how thick you like your soup, you can add more or less of the flour and chicken broth until the consistency is just how you like it!
