Butter Swim Biscuits

INGREDIENTS 2 1/2 cups all purpose flour

1 1/2 cups buttermilk (SEE NOTES)

2 teaspoons salt

1 1/2 tablespoons baking powder ( SEE NOTES)

1 1/2 tablespoons white sugar

1 stick butter, melted


DIRECTIONS:

  1. Preheat the oven to 450 degrees. In a large mixing bowl, whisk together the flour, salt, baking powder, and sugar. Pour in the buttermilk and combine.

  2. In a baking dish or cast iron skillet, pour in the melted butter. Place the dough into the dish or skillet on top of the butter and press down so it's evenly spread out. Cut squares into the uncooked dough.

  3. Bake for 25- 30 minutes

  4. Serve hot with jam, jelly, honey or your other favorite biscuit toppings!

NOTES: Mine were done and crispy at 30 minutes; depending on the power of your oven, you can bake for less time or more time.


If you do not like or have access to buttermilk, you can substitute it with the following:

1 cup of buttermilk = 1 cup of milk + 1 tablespoon white vinegar

1 cup of buttermilk = 1 cup of milk + 1 tablespoon lemon juice

1 cup of buttermilk = 1 cup of milk + 1 3/4 teaspoons cream of tartar


Baking Powder substitute? I was out, so I used the following:

2 teaspoons cream of tartar + 1 teaspoon baking soda. I added this mixture to a jar and shook to combine. This mixture is used as regular baking powder. So, 1 tsp of this mixture = 1 tsp of baking powder.
