1 lb chicken tenderloins
2 tbs olive oil
salt & pepper
1/2 pound bacon
shredded cheese of choice
In a skillet, heat the olive oil. Cut the chicken into bite sized pieces, season with salt and pepper.
Cook the bacon until crispy.
When the oil shimmers, add the chicken; cook until fully cooked and browned.
In a clean skillet, or on a flat griddle on low heat, place one tortilla down.
Add the chicken, bacon, cheese, and drizzle ranch and buffalo sauce to your liking.
Place the second tortilla on top. Cook on both sides until brown and cheese is melted (about 5-10 minutes)
NOTE: Keep an eye on the tortillas so they don't burn. You do not need to oil your skillet or griddle before placing the tortillas down.
