Blueberry Cobbler

INGREDIENTS 4 cups blueberries

1/2 cup white sugar

1/2 cup brown sugar

1 cup all purpose flour

1 1/2 tablespoons baking powder

6 tablespoons cold butter

hot water

  1. Preheat the oven to 375 degrees F. In a bowl, combine the blueberries and sugars. Set aside.

  2. In another bowl, fork together the flour and baking powder with a little bit of salt. Add in the cold butter and combine ( I used my hands) until the mixture is crumbly. Stir in some hot water, a little bit at a time until you get a dough consistency.

  3. Pour the berries in a 10 or 12 inch cast iron skillet and spoon the dough mixture on top.

  4. Bake on the middle rack for 40-50 minutes or until golden brown.

  5. Remove, let cool slightly. Serve warm with vanilla ice cream :)
