Baked Lemon Pepper Wings

INGREDIENTS

1-2 pounds chicken wings

cajun seasoning, to taste

1/2 - 1 tablespoon baking powder (1/2 tbs per pound of chicken)


Wing Sauce:

5 tablespoons butter, melted

4 cloves garlic, minced

2 teaspoons black pepper

juice from a lemon

lemon pepper seasoning, to taste

DIRECTIONS:

  1. Preheat your oven to 450 degrees F. Line a baking sheet with aluminum foil, place a greased wire rack on top, set aside.

  2. Using paper towels, dry off the wings really well and transfer to a bowl. Season with the cajun seasoning and add in the baking powder. Coat them all well.

  3. Lay the chicken out on the wire rack, spaced evenly. Bake for 15 minutes.

  4. While they bake, make the sauce. Mix all of the ingredients together in a bowl.

  5. After 15 minutes, remove the wings from the oven, flip and bake again, from 10-15 minutes; or until they are as crispy as you like them.

  6. Remove from the oven and let cool slightly; transfer to a bowl.

  7. To serve wet, drizzle the wings in the sauce. Alternatively, you can serve the wings dry and the sauce on the side.
