Alligator Sauce Piquante

1 yellow onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

3 stalks celery, diced

5-9 cloves garlic, minced

1 stick unsalted butter

1/4 cup vegetable oil

1 pound alligator, cubed

1 pound pork tenderloin, cubed

1 pound smoked pork sausage, sliced

2 8oz cans tomato paste

30 ounces water

32 ounces seafood stock


  1. In a large pot, melt the butter. Add in the onion, peppers, and celery; saute on medium heat until soft and they begin to brown down. This may take up to 45 minutes. Stir often to prevent burning. Add in the garlic; saute for 3 minutes.

  2. Remove the veggies; pour in the vegetable oil. Add in the alligator, sausage, and tenderloin, cook down on high heat until it begins to brown. Remove.

  3. Add in the tomato paste and cook for about 5 minutes on medium heat. Pour in the water and stock. Add in the veggies and meat; bring to a simmer.

  4. Let this simmer for about an hour, stirring often.

  5. Serve over rice.
